I forgot to post a recipe today!!! a wee bit distracted, sorry!
khateh wanted a favourite potato dish. We have potato with nearly every meal, and it's rarely anything fancy. So here's my fall back, make twice a week, do it in my sleep potato dish. :D
Paprika Potatoes
preheat oven to 400
peel (or better yet, buy the thin-skin potatoes that don't need to be peeled) potatoes for your household
cut into one inch cubes
place on a baking sheet (I strongly recommend parchment paper for this. it makes a huge difference).
on the potatoes, sprinkle salt, paprika, parsley and granulated garlic.
mix with your hands and pop in the oven
stir every 20 minutes, for 45-60 minutes until potatoes are well cooked.
Notes: I use granulated garlic and not fresh garlic, because fresh garlic will burn in this dish. Also granulated garlic is better than garlic salt or garlic powder, imo.
Also I like a sweet paprika, rather than a hot paprika for this.
This dish can also be done very easily in the microwave!
