Posted for [livejournal.com profile] venivincere who just asked for soup recipe, and I figured I share with everyone.

Every New Year's my sister has a 'theme' of a particular country, and they and their friends spend the entire evening cooking dishes from that country. It's pretty brilliant. You each make a dish and then eat and drink for hours. It was sooooo my thing. While I was visiting this year, their country of choice was Morocco. Each dish was amazing, but this was my fav.

Quick nacho recipe for [livejournal.com profile] cruentum

Nachos:
Put nacho chips on a baking sheet
Sprinkle with grated cheese (I prefer medium cheddar)
Sprinkle with salsa and spiced beef
Bake at 400 for 5-10 minutes (until cheese is bubbling)

Top with chopped tomatoes/onions/sliced jalapenos (optional)
Serve with sour cream and guacamole.

Bring chicken broth to a boil.
In a bowl mix together:
3 eggs
3 tablespoons of Parmesan Cheese
a pinch of thyme (chopped fine, if it's fresh)

(mix eggs with a whisk until they are light and bubbly)

slowly pour egg mixture into the boiling broth, using the whisk to stir quickly.
Let boil for a couple minutes to finish cooking eggs.

Serve with Parmesan cheese over top.

I just made this tonight and it was so delish. And quite easy. Very similar to the Amatriciana Recipe I posted a few weeks ago, but a lot less work. :D

The recipe comes from the Food and Drink magazine that is available free here at Liquor Stores in Ontario. The recipes in these magazines are TO DIE FOR. SRSLY.

This is another Christmas recipe. We have it Christmas Day, after dinner. It goes very well with a nice strong coffee. It is very sweet (obviously) and should be cut into thin slices (something like a two-finger width at the crust).

And look a picture! Yum! The recipe there is not the same as below, but that is what the end result looks like.

Even if something like this isn't your thing, do read the recipe for the total lulz of how decadent this is. But really, it's quite delish. :D

Tarte au sucre (Sugar Pie)
2 cups brown sugar
2 cups white sugar
2 cups whipping cream
bring above to a boil in a pot, then remove from heat and stir in:

1 can Eagle Brand sweetened condensed milk
1 cup Corn syrup

Add to an uncovered pie crust. Bake for 30 minutes at 400 degrees

eta: I always wondered if 'Treacle Tart' was somewhat similar to this? Anyone?

I don't cook a lot in my crockpot mostly because I'm really not a morning person so thinking about dinner 8hrs before I have to serve it hurts my head. LOL. But this is one thing I do really enjoy. It's a simple 'Roast Chicken' type of thing, nothing fancy. It can be made in the oven as well.

[livejournal.com profile] isisanubis requested: baking. Here is something slightly more healthy than the brownies I posted a couple days ago. :D

Banana Bread
1 cup sugar
2 eggs
3-4 very soft bananas (you can always stick overly-ripe bananas in the freezer so that they are ready for when you want to make this – just peel them when they are still mostly frozen!)
½ cup vegetable oil
2 cups flour
1 tsp baking soda
1 tsp baking powder
1tsp salt

combine all ingredients well. Add to greased loaf pan or muffin tins.

bake at 350 for 1 hr for loaf

Or 30 minutes if you make muffins

optional – add chocolate chips to make the kids (and adults) love them just a little bit more!

on a note of weirdness: I got a calendar in the mail yesterday (one of those Re/Max agents advertising themselves). Pretty standard stuff, but the house on the calendar was MY HOUSE! WTF? MY HOUSE! o.O Has Edward Cullen made stalking that cool? Because I was pretty creeped out. On the plus side, the kids think it's damn neat to have a pic of our house all laminated and calender-like. Still, weirdness. o.O *peeks out front window and looks around for cameras*

Mostly, those days where I've really dropped the ball on dinner means I'm searching through the freezer for something. I get 'gifted' with lots of prepared food from both my mom and my MIL. *loves them* so yeah, that's were I turn. BUT! If I have a bit of time and want to make it looked like I actually cooked something, I go with this:

BUT!!! I think I might have already given you that recipe! So... here's a bonus.

Homemade Irish Cream (actual Irish people on my flist? please don't kill me if this is a sacrilege!)
3 eggs
1 1/2 tbsp powdered chocolate (or like, chocolate milk mix)
1 can Eagle Brand sweetened condensed milk
250 ml whipping cream
1 cup of Irish Whiskey

Mix in blender for 5 minutes.
Keep in the fridge for up to a week

I used to make these to bring to the office when I had a major announcement to make. I call them my 'how to make friends and influence people' brownies. Not the quickest brownie recipe, but the results are well worth it. :D

[livejournal.com profile] okydoky requested some kind of cake. This is a ridiculously super easy cake that cuts nicely into squares to be served to guests over the hols. enjoy.

Chocolate Chip Pound Cake
1 cup sugar
2/3 cup butter or margarine
3 eggs
1 ¼ cup flour
½ cup mini semi-sweet chocolate chips
1 tbsp vanilla

Combine sugar and butter at a low speed, until fluffy. Add eggs one at a time until creamy. By hand fold in flour, then chips and vanilla.

Pour into a 9 inch greased baking pan.

Bake at 350 for 30-35 minutes
