[livejournal.com profile] romaine24 asked for 'my holy shit! I need to make something quick!!!' recipe. And I've been thinking on it a lot. Mostly, those days where I've really dropped the ball on dinner means I'm searching through the freezer for something. I get 'gifted' with lots of prepared food from both my mom and my MIL. *loves them* so yeah, that's were I turn. BUT! If I have a bit of time and want to make it looked like I actually cooked something, I go with this:


Chicken Piccata

Cut boneless chicken breast length-wise to make them nice and thin. (A chef would tell you to pound the chicken flat but it is messy and noisy and who has time for all that?)

Add oil (3 tbsp – enough that the chicken will not stick) to a frying pan, med-high heat.

In a bowl add 2 tbsp flour, salt, pepper. Coat the breasts in flour and place in hot frying pan. Cook until golden on the bottom (2 min) and flip (1 min).

Turn heat to low, sprinkle with thyme, 4oz of dry white one and one half a lemon.
Cover and cook for another 5 minutes.

I serve with broccoli (oil/fresh garlic/lemon) and ready-made french fries

And that is my 'holy shit! I only have 30 minutes and nothing in the freezer!' meal. :D


BUT!!! I think I might have already given you that recipe! So... here's a bonus.

Homemade Irish Cream (actual Irish people on my flist? please don't kill me if this is a sacrilege!)
3 eggs
1 1/2 tbsp powdered chocolate (or like, chocolate milk mix)
1 can Eagle Brand sweetened condensed milk
250 ml whipping cream
1 cup of Irish Whiskey

Mix in blender for 5 minutes.
Keep in the fridge for up to a week

mmm chicken piccata - a fav of mine to order out yet strangely I never make it. Also... you don't use capers?

You know, I've never seen it done with capers. It's that funny? I've seen mushrooms. Maybe it's a regional thing. Different parts of Italy do make the same dish differently.

And yes! it's so easy! do try it. :D

I'm making it tomorrow for hubby's bday. I don't think I've every had it w/out capers. They just 'go' so I'll use them. I'll also use brown rice flour for the flour. I'll let you know how it goes. I'm also baking a gf cake, and making his fav potatoes and some garlic spinach. I'll probably do a big GF post soon. I have a few other recipes that I've tried recently to put up as well. :)

OMG!!! YAY that looks fabulous. I can't see the full post though. I'm likely not on your GF filter (or something) but those potatoes look amazing too.

It's going to be a real challenge to turn the Chicken Piccara into a vegetarian dish. Will see what I can do with a slab of tofu. ;)

I must have missed the original posting of the chicken piccata. Yum Yum Yum. It's perfect. *hugs*

Ah, now the Irish cream. Just wow. I am half Irish. I will try this on Christmas as I don't normally eat sugar, but a few holidays I make an exception. Yes, those cookies will be eaten on and around Christmas.

YAY! glad it suits you. I really wavered just because I had posted it to maggie_cooks months ago, but it really best suits your request. (although 'order a pizza' is a really valid option)

Hee! Your Irish! I did not know this! I'm a little embarrassed giving you this recipe. I don't even know where it can from. But it's fun and yummy. And you know, you could make it without mixing in the alcolhol and serve it to your kids them just add the whiskey to yours. :D

serve with ice! it's rich. :D
