Chicken Piccata
Cut boneless chicken breast length-wise to make them nice and thin. (A chef would tell you to pound the chicken flat but it is messy and noisy and who has time for all that?)
Add oil (3 tbsp – enough that the chicken will not stick) to a frying pan, med-high heat.
In a bowl add 2 tbsp flour, salt, pepper. Coat the breasts in flour and place in hot frying pan. Cook until golden on the bottom (2 min) and flip (1 min).
Turn heat to low, sprinkle with thyme, 4oz of dry white one and one half a lemon.
Cover and cook for another 5 minutes.
I serve with broccoli (oil/fresh garlic/lemon) and ready-made french fries
And that is my 'holy shit! I only have 30 minutes and nothing in the freezer!' meal. :D
BUT!!! I think I might have already given you that recipe! So... here's a bonus.
Homemade Irish Cream (actual Irish people on my flist? please don't kill me if this is a sacrilege!)
3 eggs
1 1/2 tbsp powdered chocolate (or like, chocolate milk mix)
1 can Eagle Brand sweetened condensed milk
250 ml whipping cream
1 cup of Irish Whiskey
Mix in blender for 5 minutes.
Keep in the fridge for up to a week
